WHO ARE WE?
West Lakes Organics is based at a small, family run organic farm near Cockermouth in
Cumbria. The land is registered with the Soil Associaton and is a part of the Environmental
Stewardship Scheme.
Our produce is supplied by free home delivery.

BEEF
Our beef comes from a mixture of Galloway, Limousin and Aberdeen Angus stock. It is
hung for a minimum of 21 days to improve tenderness and flavour.

LAMB/SHEARLING
Our lambs are mainly Border Leicester/Texel crosses. Most lambs are fattened on grass
and haylage only. They live outside all year round and become shearlings when their first
fleece is removed at 14 months old. To improve tenderness, the lamb is hung for 8 days.

MUTTON
The mutton comes from female sheep which are between 3 and 5 years old. It is matured
for 2 weeks.

PORK
The free range, organically reared, rare breed pork comes from Mansergh Hall, near
Kendal. It is produced from a variety of pig breeds, including Large Black, Gloucester Old
Spot, Saddleback and Large White/Welsh cross. It is matured for about one week.

CHICKEN
The free-range chickens come from Lowther Park Farms near Penrith where they are fed a
cereal based, G.M.-free diet.
